    A total of eight barrels of hand-made wine, open fermented in stainless-steel bins, originating from select vineyards in the Banhoek and Rustenberg valleys. Turkish Delight, clove and juniper on the nose followed by fresh red stone fruits with strong white pepper and light spice to finish. The careful use of French oak creates gamey, smoked meat hints. A bold but elegant slow-food wine.

    WINE MAKING INFORMATION

    Grapes are harvested into small containers, early in the morning, at optimum phenolic ripeness and brought immediately to the cellar to remain cool. No more than two tonnes of grapes are processed per day.

    The grapes are hand sorted by a team of fanatics to ensure that only quality bunches are crushed. All matter other than grapes (mogs) is removed and spiders are rescued and returned to the vineyard.

    The grape bunches are agonizingly slowly put through a crusher-destemmer perched on top of a fermentation bin. Stalks are removed to the compost and the berries lightly crushed by rubber rollers to break their skins.

    The must (crushed grape berries and juice) is allowed to settle for a day before yeast is added to start fermentation in the one ton stainless steel fermenters. Punch down is manually performed three times a day with daily checks on temperature and balling.

    When fermentation is complete, the must is left for a few days on the skins to impart further flavour. The must is then gravity fed into the press. The press is a hand operated wooden press which allows a fine degree of control over the pressing operation. Free-run juice is collected separately from pressed juice and pressing stops well before undesirable tannin flavours can be imparted to the wine. The pressed must cake gets removed to the compost.

    After pressing the wine is decanted into French oak barrels. The wine is encouraged to undergo a second (malolactic) fermentation in the barrels to impart further smoothness and flavours to the wine.

    After malolactic fermentation is completed the wine stays in the barrels for approximately 18 months to age. During this time the oak contact imparts desirable tannin and vanilla flavours to the wine. The wine will be racked (siphoning of the wine off the lees) as required. Regular top-ups are performed as well as tastings!

    When the wine is ready, bottling is performed at the winery. The bottled wine will rest in the cellar for a few months, where after the wine is labelled, packaged and ready for consumption.

    Beaumont Hope Marguerite 2014

    Only fruit selected from their oldest Chenin Blanc vineyard, planted in 1978, is used for this wine. Barrel fermentation takes place in 400L French oak using only natural yeasts. Careful selection and use of oak results in perfect balance between wood aroma and fruit flavour, not wanting too much wood to overpower the Chenin grape character. No malolactic fermentation takes place in order to keep the freshness of the wine's acidity.The wine is kept on its gross lees for 10 months with regular batonage, giving the wine a richer and fuller palate. A great food wine that promises ageing ability.

    Vibrant dark fruit, earthy and clove pepper spice lead the aromatics of this Stellenbosch Shiraz, accompanied by soft plum fruit undertones. Natural acidity and the classic granular tannins are very characteristic of the voluptuous nature of a Stellenbosch Shiraz. This vintage is named after Nadine, Kevin and Heather’s daughter.

    A total of eight barrels of hand-made wine, originating from the 2 Ha of environmentally friendly vineyards surrounding the Amares winery. The nose hints at dark-skinned berries, a promise of mint and other herbal aromas. The wine has a broad palate with an attractive mouth feel from ripe grapes backed by mature tannins and a dry cedar finish.

    Waterford Estate Chardonnay 2015

    A brilliant olive-green hue very characteristic of this single vineyard Chardonnay. The aromatics of this wine is driven by fresh peach pip, lime and a gentle influence from oak. The age of these vines still prove to produce lovely restraint, tightly structured wines which are rather perfumed when young but develop beautifully from time spent in bottle, 2-5 years from release.

    Muratie George Paul Canitz Pinot Noir 2015

    George Paul Canitz (who owned Muratie from 1927 to 1958) had two great passions in life: painting and Pinot Noir. In the mornings he'd mix colours on his palettes, in the afternoons sample grapes. Painting into his 70s he earned fame both locally and internationally - he could hardly keep up as art lovers streamed to Muratie to buy his paintings. But as the first ever Pinot Noir grower in the country, what would eventually earn him the greatest renown was his palate for Pinot.
