    The palate has a soft ripe full fruit driven entry which complements the nose with a depth and length. The blackcurrant and blueberries are forward on the palate with a long lingering middle palate helped by the dark fruit. The fruit is open and easily tasted but with more to come with time. The tannins are subtle and full allowing one to be able to drink the wine now. This wine should age very well with the correct cellaring. The wine is very well balanced and has a long lingering fruit driven after palate with well-defined tannins. This wine is able to be enjoyed on its own or with one’s favourite dish.

    Varietal: Cabernet Sauvignon

    Appellation: Wine of Origin Stellenbosch, South Africa. The Cabernet Sauvignon grapes were sourced from carefully selected trellised vineyards in Stellenbosch. These low yielding vines contribute to an increased concentration of flavour in the wine.

    Winemaking Practices: The grapes were matured in 225 and 300 litre French oak barriques for about a year.

    Colour: Bright clear dark red edge and deep rich ruby center.

    Nose: The fruit is still tight but not slow in coming forward, ripe blackcurrant and cherry fruit as well as violets and some mineral qualities. Along with careful barreling this has prevented the wood from overpowering the fruit. The wood is well integrated with the fruit.

    Amares Syrah 2008

    A total of eight barrels of hand-made wine, open fermented in stainless-steel bins, originating from select vineyards in the Banhoek and Rustenberg valleys. Turkish Delight, clove and juniper on the nose followed by fresh red stone fruits with strong white pepper and light spice to finish. The careful use of French oak creates gamey, smoked meat hints. A bold but elegant slow-food wine.
