    Waterford Estate Chardonnay 2015

    A brilliant olive-green hue very characteristic of this single vineyard Chardonnay. The aromatics of this wine is driven by fresh peach pip, lime and a gentle influence from oak. The age of these vines still prove to produce lovely restraint, tightly structured wines which are rather perfumed when young but develop beautifully from time spent in bottle, 2-5 years from release.

    Winter was cut a little short with temperatures rising quickly in August, the growing season remained warm and dry bringing the harvest dates slightly forward. Moderate to cool conditions during ripening resulted in wines with excellent preserved aromatics and flavours. Exceptional white and red wines from this vintage, true greats.

    Chardonnay planted 1988.

    Barrel Ageing:              

    9 months, 24% new oak, fermented in 228L & 300L French oak barrels

A more restrained style of Sauvignon blanc showing fresh granadilla and green apple fruit, with underlying chalk and slate notes confirming the Elgin origin of the grapes.     The goal in producing The Jem is to truly express the diversity of our terroir, and more specifically the soils on Waterford Estate. To reach this goal of completeness, the blend is compromised of different varietals all grown on the property. Driven by Cabernet Sauvignon with ripe cherries, black current and cedar wood. Also well complimented by truffle like flavours and exotic spice. The wine is well layered and integrated tannins combine with fruit flavours to offer an elegant yet long lasting finish that is classically dry and rewarding.

    Beaumont Hope Marguerite 2014

    Only fruit selected from their oldest Chenin Blanc vineyard, planted in 1978, is used for this wine. Barrel fermentation takes place in 400L French oak using only natural yeasts. Careful selection and use of oak results in perfect balance between wood aroma and fruit flavour, not wanting too much wood to overpower the Chenin grape character. No malolactic fermentation takes place in order to keep the freshness of the wine's acidity.The wine is kept on its gross lees for 10 months with regular batonage, giving the wine a richer and fuller palate. A great food wine that promises ageing ability.
